Ampalaya with Ground and Pork Chorizo

Ingridients:
  • 1 pc Ampalaya, thin sliced
  • 1/4 kl Ground Pork
  • 2 pcs Pork Chorizo, Mashed
  • 1/2 Carrot, thin sliced
  • 1 pc Bell Pepper, thin sliced
  • 1-2 tbsp. Oyster Sauce
  • Onion, minced
  • Garlic, minced
  • 1-3 tbsp. Fish Sauce / Patis
  • Soysauce
  • Salt
Procedure:
  • In a heat pan put the ground pork, then add 2-3 tbsp of water (let it evaporate)
  • Note: Gound pork has it's own oil, we will use that oil for our onion and garlic.
  • Saute the ground pork and let it's texture change to golden brown.
  • Add onion and garlic and then saute until turn to golden brown.
  • Follow by mash pork chorizo, and saute frequently.
  • Add 1-3 tbsp Fish sauce and ground black pepper, and saute to absorb the seasonings.
  • You can now add the Vegestables : Ampalaya, bell pepper and sliced carrot and mix them.
  • Add 1 tbsp of oyster sauce and saute.
  • You can also add 1-2 tbsp Soysauce for it's color mixture, and salt for your taste.
  • Cover it and simmer for 2-3 minutes, turn of fire after.
  • Now its ready to serve.

 How to cook Pork Nilaga

Ingredients:
  • 1 pc. Bell Pepper, Sliced
  • Spring Onion (Sibuyas dahon)
  • 1 pc. Lemon grass
  • Fish Sause (Patis)
  • 1 pc. Pork cube
  • 3 pcs Saba Banana, sliced
  • 1/4 Cabbage
  • 3 pcs Potatoes
  • Black pepperOnion
  • Salt
Preparation :
  • Heat the cooking oil, add the onion and saute.
  • Follow by 1/4 kl. Pork and Saute until pork turn to light.
  • Add the 1 tbsp. fish sauce "Patis" and 1 pcs Pork cube.
  • Frequently saute until Pork absorb the spices and let it's texture change.
  • Then add 3-5 cups of water, cover it and set your fire into medium and let it simmer for 20-30 minutes.
  • After simmering the pork (make sure to check if the pork tender), add the following : Saba Banana, Potatoes, Lemongrass, Bell pepper and ground black pepper. Simmer it again for 4-5 minutes.
  • Add salt for the taste and the Cabbage, simmer for 2-3 minutes.
  • Pork Nilaga / Nilagang Baboy (Boiled Pork in english) is now cooked and ready to serve.
  • For the final touch, springkle the spring onions.

How to Make Tinolang Manok

Ingredients :
  • Chili leaves
  • 1 Pcs Chayote “sayote in tagalog”  (Papaya optional)
  • ½ kl Chicken
  • Garlic
  • Onion
  • Ginger
  • Salt
  • Ground Pepper
  • 2 Chicken Cubs
  • Spring Onion
Preparation :
  • Heat the Cooking Pan, add Cooking Oil followed by Garlic, Onion and Ginger.
  • Add the ½ kl Chicken and frequently sauté until the Chicken texture will change to light.
  • Follow the 2 Chicken cubs (Fish sauce, optional)
  • Sauté , let the chicken absorb the seasonings
  • Add the 3-5 Cups of water and Steam for 8 – 10 minutes,  medium fire.
  • After, add the cubed chayote with ½ tbsp. salt and ground pepper.
  • Steamer for 5-8 minutes  
  • After follow by Chili leaves and spring onion, cover it. Turn off the fire.
  • Ready to serve.

How To Make Chili Garlic Sauce


How To Make Chili Garlic Sauce 

Ingredients :
  • ¼ kg Chili Pepper
  • 2 Pcs whole Garlic (minced)
  • 1 Cup Cooking Oil
  • 1 tbsp. Sugar
  • 1 tbsp. Salt

Preparation:
  • Remove the head of the chili pepper (all).
  • Wash the chili, let it dry.
  • Blend the chili after dried. Make sure all the chili are properly blend. (Note: While opening the cover of the blender make sure don’t get to close. The aroma of the chili will burst. You may not like it. You can also cover your nose )
  • Heat the pan and add the 1 cup of cooking oil.
  • Add the grind chili and sauté for 2-3 minutes
  • Follow by garlic (minced) – add 1 tbsp. sugar and 1 tbsp. salt (frequently sauté) with low fire.
  • Let it cook for 4-6 minutes. (frequently sauté)
  • After cooked, let it cool for 20 - 30 minutes.
  • Place it on an empty glass jar after cool.


How to Make Tortang Talong with Ground Pork


How to Make Tortang Talong with Ground Pork - Toratang talong (Eggplant), according to the health study it has a good source of copper, fiber and vitamin B1. Also It has vitamin B6, manganese niacin, folate, vitamin K, and potassium.

Ingredient:
  • 2 Pcs Talong (Eggplant)
  • 2-3 Eggs
  • ½ Tablespoon of salt
  • ¼ Ground Pork ( you can also use beef, chicken)
  • 1-2 Pcs Bell Pepper
  • 2 Potatoes
  • 1 Tablespoon of Cornstarch
  • Ground Pepper
  • Oil
  • Salt

Procedure:
  • Place the Eggplant in the pan with water and let it boil (you can also grill the eggplant, optional)
  • After the Eggplant is cooked let it cool for 2-3 minutes
  • When cool, peel the skin of the eggplant
  • Now for the Ground pork : Heat the pan with oil, add the garlic, onion and bell pepper (minced)
  • Add the ground pork, sauté and let it cook.
  • For the Eggplant and Eggs : Crack the 2-3 Eggs in the Bowl, add 1 tablespoon of cornstarch and ¼ tablespoon of salt and Mix using pork
  • Place the peeled eggplant in the bowl of mix egg and smash it using pork (make sure to spread eggplant to place the ground pork)
  • Add ground pork after eggplant is smashed
  • Heat the pan with oil and place the Eggplant with Ground pork carefully, in low fire
  • Cooking Eggplant is like cooking sunny side up egg. Turn sides if cook.
  • Now It’s ready to serve.
